After reaching complete phenolic maturity, the grapes were harvested and sent for vinification in thermo-conditioned stainless steel tanks, where alcoholic fermentation took place at a controlled temperature, kept below 26°C. The maceration phase was continued for 8-10 days. Malolactic fermentation completed its cycle by the beginning of winter. Subsequently, the wine aged in steel for approximately 8 months.

NePriCa Negroamaro has a ruby ​​red color enriched with light violet nuances. On the nose, it releases aromas of red fruits, such as black cherry and raspberry, accompanied by pleasant floral notes of rose, violet and iris. On the palate, the entry is soft, highlighted by sweet tannins supported by good freshness and a pleasant fruity aftertaste

Strong focus on Apulian native grape varieties such as Primitivo, Negroamaro and Fiano. Commercial production, also through an online shop, and offering extra virgin olive oil. International recognition for some wines.
Winery history
The Tormaresca project originated from the Antinori family's investment in Puglia. Operations under the Tormaresca label began in 1998 and have grown to include multiple estates and a modern winery; the Cantina di Masseria Maìme has been operational and described as a modern facility since 2009. Among the properties are Tenuta Carrubo and Masseria Maìme, as well as other entities linked to the regional project.
Production philosophy
Combining local tradition with a modern approach: reviving and showcasing indigenous Apulian grape varieties through contemporary winemaking practices to express the regional terroir while maintaining high quality standards.

Activities extend across several areas of Puglia: Alto Salento / Salento, the Manduria area, and parts of the Murgia associated with productions such as Castel del Monte.
