The vinification of Amarone Classico follows a unique process that begins with the appassimento of Corvina, Rondinella, and other local grape varieties. The hand-picked grapes are left to dry for several months in a fruttaio, a traditional method that concentrates sugars and aromas. Subsequently, the wine is fermented and aged in large oak barrels for a period that can range from 18 to 24 months, followed by further refinement in the bottle.

The result is a wine of great structure and intensity. On the nose, the Valpolicella Amarone Classico - Historic Vintages by Clementi offers complex aromas of ripe fruit such as plums and cherries in spirit, enriched by spicy notes of black pepper and tobacco. On the palate, the wine is velvety and powerful, with an impeccable balance between acidity and soft tannins. The finish is persistent, with echoes of dark fruit and chocolate.
