Primitivo Salento IGT "Piluna", produced by Castello dei Monaci, is a red wine that embodies the strength and generosity of the Apulian land. The name "Piluna" comes from ancient Greek, meaning "terracotta", used by our ancestors to create vessels that were used to store oil and wine. This historical reference underlines the profound connection between wine, its land of origin and ancient winemaking traditions.

Produced exclusively with Primitivo grapes, carefully selected from vineyards located in the heart of Salento, this wine represents the pure expression of one of the most emblematic vines of the region. The warm and sunny climate of Salento, together with the particular composition of the soil, gives the Primitivo "Piluna" an aromatic richness and a remarkable structure.

The wine has an intense ruby ​​red color, enriched by violet reflections that highlight its vitality. On the nose, it offers a rich and complex olfactory profile, with predominant notes of ripe red fruits, such as cherry and plum, accompanied by nuances of sweet spices and a light touch of vanilla, the result of aging in wood which further enriches the bouquet without overpowering it.

In the mouth, the "Piluna" Primitivo Salento IGT reveals itself to be full and enveloping, with soft and well-integrated tannins that support a balanced structure. The sweetness of the red fruits blends with a pleasant acidity, leading to a long and persistent finish, characterized by a pleasant spicy note.

Perfect in combination with robust dishes, such as grilled red meats, game dishes and mature cheeses, Primitivo "Piluna" is also an excellent companion for convivial evenings, where its generosity and warmth can be fully appreciated.

With "Piluna", Castello dei Monaci offers a tribute to the richness and diversity of Salento, offering a wine that is at the same time a celebration of historical roots and a testimony to Apulian winemaking excellence.

Winery history
The building known as Castello Monaci has historical origins dating back to the Renaissance/medieval period and takes its name from an ancient settlement of Basilian monks. Over the centuries the fortification’s use and ownership have changed several times, and it is now managed by the Memmo Seracca Guerrieri family, who have enhanced the historic residence by integrating winemaking, hospitality and events.
Production philosophy
It combines respect for native Salento grape varieties and the local terroir with the use of modern winery technologies: temperature-controlled vinification, ageing in barriques, and a focus on wine tourism through wine tours and a wine museum that showcases local traditions.
Terroir and vineyards
Located in the heart of Salento, in Contrada Monaci near Salice Salentino and San Pancrazio Salentino, the estate is set among vineyards and olive groves and is influenced by the proximity of the Ionian and Adriatic seas. The soils include tuffaceous formations typical of the area.
