The Derthona Colli Tortonesi Timorasso DOC by Ca de gli Olmi - Luca Canevaro is a white wine that embodies the excellence of the Timorasso grape, typical of the Alto Piemonte region. Produced in an area well-suited to viticulture, in the enchanting hills of Tortona, this wine is the result of the passion and experience of the producer, Luca Canevaro.
The winemaking process begins with a meticulous selection of grapes, which are handpicked to best preserve their characteristics. The fermentation takes place in stainless steel tanks to maintain the fruity aromas and the freshness of the grape variety. Maturation follows in small oak barrels for a period ranging from six to eight months, enriching the wine with vanilla nuances and a slight toasted note.
The Derthona Colli Tortonesi Timorasso DOC features a bright straw-yellow color with golden highlights. On the nose, it offers a complex and intensely aromatic bouquet, with notes of ripe fruit such as peach and pear, followed by hints of white flowers and a slight trace of fresh almond. On the palate, the wine is full and harmonious, with a perfect balance between acidity and minerality resulting in a persistent freshness. The finish is long and pleasantly savory.
This wine is ideally served at a temperature of 10-12°C. It pairs beautifully with rich fish dishes, such as stoccafisso accomodato or seafood risotto, but is also an excellent companion to soft cheeses and egg-based dishes. Its versatility makes it an excellent choice for various occasions, from an aperitif to an elegant dinner.
In summary, the Derthona Colli Tortonesi Timorasso DOC by Luca Canevaro is a superb specimen that enhances the quality and expressiveness of Timorasso, distinguished by its elegance, complexity, and drinkability.
