Saomì comes from pure grapes harvested by hand from younger vines than Glera. The second fermentation takes place in an autoclave as per tradition, followed by a stop on the lees at low temperature for 4 weeks, as per the Charmat method, designed to preserve the aromas and delicate gustatory freshness. 

It shows a bright straw yellow color with greenish reflections. The nose has fruity hints of green apple and pear, with floral scents of spring flowers, a typical and characteristic bouquet. In the mouth the taste is decidedly fresh and delicate, pleasantly effervescent.

The perfect sip to sip during an informal aperitif; a lively and fresh glass excellent in combination with seafood dishes and absolutely to be tried with fried pasta and crescenza.

Winery history
La Tordera was established as a family-run estate in the hills of Cartizze. The Vettoretti family's history is documented as far back as 1918, when the great-grandfather planted the first vineyards. Over the generations the estate has grown while retaining family management and has consolidated production in the Rive di Valdobbiadene, with investments in the cellar, hospitality and commercial development.
Production philosophy
The company states a "Natural Balance" approach: agronomic practices aimed at respecting the terroir, reducing inputs, attention to energy efficiency, and the use of sustainable materials in the winery. Production is oriented toward enhancing the terroir through technical choices and certifications that attest to its environmental commitment and food safety.
Terroir and vineyards
Based in Vidor, in the heart of the Valdobbiadene hills and in the denomination’s characteristic Rive; vineyards on moraine and sedimentary soils that impart freshness, minerality and finesse to the sparkling wines of the various crus.
