The meticulous selection of high quality grapes and the voluntary limitation of yield in the vineyard give this wine a remarkable structure. The production process begins with destemming and pressing of the grapes, followed by fermentation with maceration on the skins lasting 12-15 days, racking and malolactic fermentation. As regards refinement, the wine matures for 12/18 months in barriques, followed by over 24 months of refinement in bottle.
The result is a wine with an intense ruby red color that tends towards garnet. The aroma is characterized by notable intensity and complexity, with hints of ripe fruit in which morello cherry stands out, accompanied by delicate notes of spices. From a taste point of view, it is soft, warm and rich in noble tannins, with a notable persistence.
It is particularly suitable for pairing with grilled meats, game and mature cheeses.
