After the harvest, the grapes were delicately destemmed and pressed. The resulting must was transferred to stainless steel tanks, kept at a temperature of 12°C to clarify it naturally. Here, alcoholic fermentation took place at 16°C, with the aim of preserving and accentuating the aromatic qualities of the wine. Before bottling and subsequent distribution, Calafuria faces a short period of aging in steel in contact with its own yeasts.

The result is a rosé wine with a delicate powder pink color. The aromatic profile is characterized by fruity and citrus notes of pink grapefruit, orange blossom, enriched by subtle hints of jasmine and lime. In the mouth, it is pleasantly fresh, characterized by excellent aromatic persistence and a delicate savory note.

Project launched by the Antinori family in Puglia. Main estates: Masseria Maìme, Tenuta Carrubo and a presence at Tenuta Bocca di Lupo/Castel del Monte. Strong focus on Apulian native grape varieties such as Primitivo, Negroamaro and Fiano. Commercial production, also through an online shop, and offering extra virgin olive oil. International recognition for some wines.
Winery history
The Tormaresca project originated from the Antinori family's investment in Puglia. Operations under the Tormaresca label began in 1998 and have grown to include multiple estates and a modern winery; the Cantina di Masseria Maìme has been operational and described as a modern facility since 2009. Among the properties are Tenuta Carrubo and Masseria Maìme, as well as other entities linked to the regional project.
Production philosophy
Combining local tradition with a modern approach: reviving and showcasing indigenous Apulian grape varieties through contemporary winemaking practices to express the regional terroir while maintaining high quality standards.
