Its production begins with the manual harvest of the grapes in October. The grapes are subjected to soft whole bunch pressing, from which a high quality must is obtained. This must goes through a low temperature fermentation in steel tanks for 15-20 days.
During the refinement phase, the wine rests in steel containers and undergoes a practice known as "élevage sur lies" for five months before bottling. During this period, a " stirring" weekly which helps to enrich the complexity and structure of the wine.
As for the scent, Etna Bianco offers an intense aroma, with evident notes of broom, citruses and a herbaceous touch in the background. On the palate, the wine is full, intense and fresh, with an alternating play of salinity and lemon accents. The finish expresses a wide range of flavors, from the delicacy of mandarin flowers to the spiciness of candied ginger.
This wine is the ideal accompaniment for dishes such as seafood risotto, fried fish or sea bream in salt.
