The Moscato vineyards are grown on the second hill of the Oltrepò Pavese, in the municipalities of Volpara, Santa Maria Della Versa and San Damiano al Colle on a soil whose composition derives from the disintegration of calcareous marl and sandstone, with a clayey part, located at 300/ 350 m a.s.l.
In the cellar there is a short maceration on the skins, soft pressing of the grapes and separation from the skins. The must is stored in temperature-controlled "autoclaves" steel tanks, where the primary fermentation starts following the Martinotti Method at a temperature of 14°/20° for a period of about 15/20 days. After filtration, the wine is bottled and aged for 3 months before placing on the market.
In the glass it has a beautiful straw yellow color with greenish reflections. The bouquet is fresh, with floral and fruity aromas of apple, peach and citrus. On the palate it is sweet, structured and elegant, with the right retro-olfactory persistence.
We recommend the combination with desserts, in particular cream cakes, as well as being the ideal goblet to combine with Easter Colomba and Panettone.
