The San Valentino company motto states: "good wine is born in the vineyard and is completed in the cellar", and it is precisely on the basis of this that all interventions on the plants are carried out with a single purpose: to create optimal conditions for healthy grapes and of excellent quality. Sangiovese Superiore Riserva Terra di Covignano, is a wine whose grapes derive from organic farming and whose fermentation is natural in steel with indigenous yeasts, and therefinement takes place in large wooden barrels and barriques for 18/20 months.

A drink that has an intense ruby ​​red color with purple hues in the glass. The sense of smell is intoxicated by the sintense fruity aromas of cherry, blueberries and bluecurrants that open up to spicy notes of thyme and juniper, and floral hints of violet and red rose, as well as nuances of rhubarbA majestic and elegant red, capable of surprising until the last sip

When tasted, it immediately proves to be broad and well-structured, with a well-evolved tannic fiber and a surprising finish with hints of bitter chocolate and plum jam on the palate. At the table it is excellent in combination with red meat dishes, roasts and medium-aged cheeses.

Winery history
The winery is a family-run operation tied to the Mascarin family; the business developed from the 1990s and in recent years management has also involved the Aureli family. Since the late 2000s the estate has adopted natural/organic vineyard practices and has progressively reorganized production, focusing on a few selected varieties and distinctive product ranges.
Production philosophy
Production focused on respect for the land and the vine, employing organic practices in the vineyard and aiming to produce wines that reflect the character of the grapes and the local microclimate. The winery clearly prioritizes vineyard quality as the starting point for its wines.
Terroir and vineyards
Situated on the hills of Covignano, a few kilometres from the Adriatic coast and close to Santarcangelo/San Martino in Venti. The climate is moderated by the sea breeze, which contributes to the balance of the grapes grown on the hills.
Awards and recognitions
Critical recognition: among documented mentions is the 5 Grappoli in the Guida Bibenda 2026 for the Syrah 2021.
