The grapes intended for this wine are harvested in August through a precise manual harvest, using small crates and carefully selecting the grapes in the vineyard by thinning. The vinification begins with a delicate pressing of the whole bunches, followed by a static decantation of the cold musts. Fermentation takes place at a controlled temperature in steel tanks, with a pause on the fine lees. Subsequently, the wine undergoes refermentation in the bottle and remains on the yeasts in the bottle for 18 months. The refinement continues for 3 months in steel vats, followed by a further 18 months on the yeasts in the bottle.
Visually, the wine is brilliant with a straw yellow color and a fine and persistent bubble. Upon olfactory examination, characteristic fragrances of bread crust and yeasts can be distinguished, with light notes of custard. Aromas of white flowers, hawthorn and citrus aromas of pink grapefruit also emerge. Overall, the taste-olfactory profile reveals a dry, warm, soft wine, with good freshness, flavor and minerality.
