The Passito Salento IGT "Moscatello Selvatico" by Castello Monaci, presented in a 50cl format, is a refined and intense expression of the Apulian winemaking tradition, dedicated to the production of sweet wines from dried grapes. This wine is produced with Moscato grapes, selected for their quality and ability to concentrate sugars and aromas, harvested in the heart of Salento, a land kissed by the sun of southern Italy, where viticulture finds unique expressions thanks to the warm climate and fertile soils .

The "Moscatello Selvatico" stands out for its aromatic complexity and its rich taste, the result of a careful process of drying the grapes and a vinification that aims to preserve the intensity of the aromas and the natural sweetness of the fruit. Castello Monaci, a winery that has been committed for years to the valorization of native Apulian vines and the production of high quality wines, with this passito offers testimony to its savoir-faire and the richness of the Salento area.

The wine has an intense, brilliant and inviting golden yellow color. On the nose, the bouquet is an explosion of aromas of exotic fruit, honey, dehydrated apricot and orange blossom, with notes of sweet spices that add complexity and depth. In the mouth, "Moscatello Selvatico" reveals an extraordinary concentration of flavors, with a sweetness balanced by a fresh acidity that enhances its drinkability, leading to a long and persistent finish, where the aromatic richness blends with a pleasant mineral vein.

Ideal as a dessert wine, Passito Salento IGT "Moscatello Selvatico" pairs perfectly with traditional Mediterranean desserts, blue cheeses and foie gras. Its complexity and elegance also make it an excellent meditation wine, to be enjoyed slowly to appreciate all its nuances.

With the "Moscatello Selvatico", Castello Monaci celebrates the tradition and oenological innovation of Salento, offering a passito wine that is an expression of a unique territory and of the passion for quality viticulture.

Winery history
The building known as Castello Monaci has historical origins dating back to the Renaissance/medieval period and takes its name from an ancient settlement of Basilian monks. Over the centuries the fortification’s use and ownership have changed several times, and it is now managed by the Memmo Seracca Guerrieri family, who have enhanced the historic residence by integrating winemaking, hospitality and events.
Production philosophy
It combines respect for native Salento grape varieties and the local terroir with the use of modern winery technologies: temperature-controlled vinification, ageing in barriques, and a focus on wine tourism through wine tours and a wine museum that showcases local traditions.
Terroir and vineyards
Located in the heart of Salento, in Contrada Monaci near Salice Salentino and San Pancrazio Salentino, the estate is set among vineyards and olive groves and is influenced by the proximity of the Ionian and Adriatic seas. The soils include tuffaceous formations typical of the area.
