Juhfark is a wine obtained with only the berries of the vine of the same name cultivated with the principles of biodynamics, on clayey soils on a volcanic rock substrate, at about 250 m a.s.l. After harvesting, the grapes are placed in open tanks for 7 days for the so-called "Hamburger method", which involves alternating layers of bunches pressed with feet, whole bunches and de-stemmed grapes. The alcoholic fermentation takes place spontaneously with indigenous yeasts, then it is matured in 500 hl Hungarian oak barrels for 10 months on the fine lees. No clarification or filtration operations are carried out during the winemaking process.
It appears in a bright straw yellow color. On the nose, fresh citrus aromas of lemon and grapefruit chase each other, finely blended with hints of black tea and light nuances of mint. The sip is perceived creamy and enveloping, with a great freshness and long savory-mineral persistence.
It goes perfectly with seafood first and second courses.
