The vinification is carefully controlled to preserve the natural characteristics of the grape variety and the environment, with a controlled temperature fermentation that allows the freshness and complexity of the Sauvignon Blanc to be enhanced, followed by a short period of refinement on the fine yeasts to add roundness and structure to the wine.

Visually, the Pouilly-Fumé "La Rambarde" has a brilliant straw yellow color, with greenish reflections that underline its youth and liveliness. On the nose, the wine offers a rich and complex bouquet, dominated by aromas of citrus, white pulp fruit and floral notes, enriched by that typical "smoky" minerality and vegetal nuances that characterize Sauvignon Blanc in this region.
