A Pignoletto that was born on the Bolognese Hills, in the Marconian Hills microzone, at an altitude of about 250m above sea level. with south-east exposure and medium-textured soil composition.

The manual harvest of the grapes takes place when perfectly ripe. The vinification continues with the crushing and destemming of the bunches, soft and fractionated pressing of the must using only the first most noble part obtained at the beginning of the pressing. This is followed by cold static decantation at a controlled temperature of 15/16°C and the second fermentation in an autoclave for about 40 days. Before being put on the market, the wine ages in the bottle for a minimum of 2 months

A pleasantly sparkling wine that shows itself to the eye with a light yellow color with light greenish reflections. Delicate fruity aromas arrive on the nose that invite the sip. On the palate it is rather soft, fresh, dry and structured, with a pleasant bitterish aftertaste.

A glass that lends itself beautifully to being consumed as an aperitif and with all seafood dishes.
