The harvest for this vine takes place between the beginning and mid-September. The grapes are harvested manually and placed in small boxes in the early hours of the morning, maintaining a temperature between 12°C and 15°C to preserve their aromatic characteristics. Immediately after harvesting, the grapes are transported to the cellar and the alcoholic fermentation process begins in stainless steel tanks, maintained at a temperature of 15/18°C for approximately 20 days.
The refinement period takes place in steel, on the fine fermentation lees, until March, followed by a further 6 months of maturation in the bottle. Even in the younger vintages, this vine manages to express a notable alcohol content, thanks to the preservation of acidity and careful work on aromatic freshness. The wine presents a vigorous and tasty entry, surrounded by aromas of herbs, anise and peach.
