The "Spumante Metodo Classico Extra Brut" by Pojer & Sandri winery represents one of the most refined and elegant expressions of Italian artisan sparkling wine. Located in the heart of the Val di Cembra, a unique geographical area for its climate and terroir, the Pojer & Sandri winery uses only selected grapes grown with organic and biodynamic methods, respecting the environment and the continuity of the landscape.

This sparkling wine is produced through the Metodo Classico, also known as the Traditional Method, which is the same used for making Champagne. This involves a secondary fermentation in the bottle, followed by a maturation period on the yeast for at least 36 months, which gives this wine complexity, structure, and particularly rich aromatic nuances.

The Extra Brut by Pojer & Sandri is distinguished by its very low sugar addition, less than 6 grams per liter, making it extremely dry, fresh, and lively on the palate. On the nose, mature citrus, toasted bread, and yeasts are discerned, along with subtle hints of stone fruit and white flowers, which harmoniously intertwine with a marked minerality, typical of the region's stony terrain.

On the palate, the wine offers an excellent balance between sharp acidity and creamy body, with a long persistence and a fine effervescence that cleanses the palate, leaving an impression of elegance and refinement. It is an excellent choice as an aperitif or to accompany dishes made with raw fish, oysters, or fresh seafood.
