Sansevé comes from the ancient Gaelic, and means "health!" a particularly suitable name for this wine of great personality and elegance, which make it an ideal companion to accompany unique convivial moments. Satèn, on the other hand, is a registered name of the Consortium of Franciacorta and corresponds to a production protocol which provides for the exclusive use of Chardonnay and Pinot bianco grapes, an atmospheric pressure of less than 5 atmospheres, a maximum sugar content of 15 g/litre and a minimum aging on the lees of 24 months.

After careful selection of the grapes, at the right moment of ripeness, these are harvested manually in boxes. This is followed by delicate pressing with selection of the best part of the grapes, for no more than 55% of the yield. Each cru is vinified alone. Fermentation takes place for 85% in steel vats at a controlled temperature, and 15% in oak barrels. Bottle aging is for a minimum of 24 months. 

A bubble that in the glass has a golden yellow color and its perlage is fine and persistent. A seductive bouquet that emanates sensations of almonds, exotic fruit, icing sugar and pastry desserts, it will accompany you throughout the tasting. In the mouth it has a lively and very pleasant taste, and from the first sip, it demonstrates a good balance of flavor and freshness that give an elegant and at the same time fragrant drink.

A soft and enveloping sparkling wine which at the table goes perfectly with appetizers, light first courses, dishes based on raw or smoked fish.

Winery history
The estate was established through the commitment of Paolo Rabotti and Paola Rovetta. The family's winemaking activity at Monte Rossa began in 1972. Over time the estate progressively focused its production on Franciacorta sparkling wines, developing cru and reserve selections that have contributed to its national and international visibility.
Production philosophy
The production project focuses on research, experimentation and technology to produce characterful Franciacorta: care of the crus, selective use of fermentations and attention to sustainability in the organization of the new winery.
Terroir and vineyards
Collina di Monte Rossa in Bornato, in the heart of the Franciacorta denomination. The territory is of morainic origin, characterized by hills and mineral-rich soils that contribute to the structure and sapidity of the grapes.
