The Pinot Nero Sanct Valentin from the St. Michael Eppan winery is a distinguished example of how this noble grape, originally from Burgundy, can express itself magnificently on the soils of Alto Adige. The Sanct Valentin line is known for being the flagship selection of the winery, intended to showcase the full qualitative potential of the cultivated varieties.

Color and Visual Appearance: This Pinot Nero presents with a delicate and deep ruby red color, with light garnet reflections that intensify with aging.

Aroma: On the nose, it offers a complex and seductive bouquet, with aromas of ripe red fruits such as cherries and raspberries, joined by spicy notes and a subtle hint of wood, due to maturation in barriques. The olfactory sophistication is enriched by nuances of incense and damp earth, typical of a high-end Pinot Nero.

Palate: In the mouth, the wine is elegant and well-structured. The entry is soft but followed by nice acidity and fine tannins, which lead to a long and persistent finish. The balance between fruitiness, freshness, and the woody component is harmonious, reflecting both careful winemaking and the expression of the terroir.

Pairings and Occasions: The Pinot Nero Sanct Valentin is ideal to accompany delicate yet flavorful dishes, such as a beef fillet in porcini mushroom sauce or truffle-based dishes. It is also excellent with aged cheeses and sophisticated poultry dishes.

This wine is intended for Pinot Nero enthusiasts who seek a distinct and multifaceted expression, typical of high latitudes, and represents an excellent choice for special occasions or as a valuable addition to a cellar of selected wines.
