Val de Brun is produced with 100% Glera grapes deriving from the “Costa del Sol” vineyards of Refrontolo, in the heart of the Conegliano-Valdobbiadene area, harvested by hand in September, when their perfect organoleptic balance is reached.
In the cellar, a soft pressing and static decantation is carried out, then autochthonous yeasts are added to the must to start the primary fermentation, and transferred to stainless steel at a controlled temperature of 16 ° C. Subsequently it is placed in an autoclave for the second fermentation, which takes place with constant fermentation for a period of 20-25 days, plus a further 15 days on the lees.
At sight it shows a straw yellow color with light greenish reflections, with a fine and continuous perlage. On the nose there are citrus scents of Sorrento lemon, fruity hints of peach and white melon, with Mediterranean aromas of aromatic herbs and thyme. In the mouth it is particularly soft, rather harmonious and creamy; the finish recalls aromatic herbs and a savory taste that adjusts the sugar content.
It goes perfectly with crepes with Treviso radicchio and ricotta, perfect as an aperitif, excellent with baked white fish, ideal with fish first courses.
