Piancastello Zero Riserva is a Trento DOC sparkling wine produced with Pinot Nero and Chardonnay grapes grown on soils with limestone dolomitic characteristics near the Castle of Monreale - Königsberg. One of the rare vineyards in the region with a structure like an authentic clos (French word that refers to a vineyard surrounded by walls or walls), surrounded by woods and Guyot trained for over 30 years, with vines from Champagne.
The harvest is carried out manually in small boxes, to ensure their integrity until pressing. The first fermentation is carried out partly in barrique and partly in steel, with the classic refermentation method provided by Trentodoc in the bottle. The aging on the lees is at least 48 months in order to obtain an otherwise unattainable elegance, with a minimum "dosage".
In the glass it shows off a beautiful bright straw yellow color and a cheerful, minute and continuous perlage. The perfume is particularly intense, of great finesse, with aromas of green apple, bread crust and a pleasant mineral note. The taste is decidedly dry, clean and elegant, extremely savory and enveloping, with a refined fresh and persistent note.
Like any self-respecting Trento DOC, it is excellent as an aperitif and can be sipped throughout a meal.
