Pairing Red meats, aged cheeses

Nerum is an organic and natural wine without the addition of any chemical additives, which contains only natural sulphites, vinified in terracotta jars insulated with natural resin and home-grown beeswax, at a depth of 3 meters.

It enchants to the eye with its ruby red color with deep ruby-purple reflections. Offers a scent to the nose unique, intense and well defined with hints of honey and resin. Initially it may seem sweet due to the explosion of flavors deriving from the isolation of the vessel and the exchange with the minerals of the soil, but it ends up being very dry and tannic.

A certainly ideal drink to combine preferably with red meats or seasonal cheeses, suitable for a quiet evening with friends or for everyday meals.

2 liters of quality contained in an elegant amphora in glazed terracotta and decorated with real pure gold and sealed with red shellac.

We recommend far settling for 30-60 minutes before serving.

Winemaking inspired by ancient Etruscan methods: use of buried terracotta amphorae. Metodo Mondini Organic farming and a permaculture approach Handcrafted, small-batch production with attention to local tradition. Appellations listed: Bianco Toscano IGP and Rosso Toscano IGP
Winery history
The project originated from research begun around 2000 with the aim of reconstructing Etruscan winemaking. After years of experimentation with archaeologists, geologists and agronomists, the estate began using buried terracotta jars as vessels for winemaking; the first series of "official" jars was buried in 2014. In 2015 the estate’s internal production system, known as the "Metodo Mondini," was codified. The project is described directly by the producer on its website and in industry fact sheets.
Production philosophy
Organic and natural farming practices: production without GMOs or chemical additives, hand harvesting, use of permaculture techniques, and experimentation with traditional amphora winemaking to produce natural wines that express the character of the territory.
Terroir and vineyards
The vineyards and estate are situated on the slopes of the Foreste Casentinesi, in Antria. The soil is described as calcareous with a thin layer of topsoil; the microclimate and historic vineyards contribute to the character of the wines.
