Official website
The story
The Folonari family has longstanding ties to Italian viticulture and manages several estates in Tuscany. On the official Tenute Folonari pages the product selection includes chosen spirits such as the cognacs from Maison Daniel Bouju (Grande Champagne) and grappas produced from the estates' pomace, notably Tenuta Campo al Mare (Bolgheri).
Production philosophy
Enhancing terroir and quality through focused selections: for spirits Folonari combines local product (grappas from its own estates) and bottles selected from historic maisons (Grande Champagne cognacs), while maintaining attention to tradition and wood ageing.
Territory
Headquartered and managed in Tuscany (Greve in Chianti); products in the selection originate from Grande Champagne (France) for the cognacs and from Bolgheri / other Tuscan estates for the grappas.
Production method
The cognacs in the selection come from Maison Daniel Bouju, which distils and ages its spirits in Grande Champagne; the grappas from Tenute Folonari are obtained from the pomace of their estates (e.g. Campo al Mare) and distilled in discontinuous steam-heated copper stills, followed by ageing in wood.
Distillation
For the Daniel Bouju cognacs: distillation in a traditional discontinuous pot still (historic still of 16.5 hl) and subsequent maturation in oak barrels; for the Tenute Folonari grappas: discontinuous distillation using steam-heated copper stills.
Ageing
Maturation in wooden/oak barrels for the cognacs and ageing in various wooden casks (in some cases barrique) for the assorted grappas.
