On the palate the sip is dry, pleasantly rounded in the center, with well-integrated alcoholic warmth and a salinity that supports persistence. The finish is clean and dry, with a citrus return that invites a second sip. It suits a high-quality gin and tonic, with a neutral tonic water and a citrus twist, but also stands up well to classic mixes; serve chilled, preferably in a tall glass with ice, to appreciate its purity and balance. For aromatic variations try a pink grapefruit peel or a basil leaf as garnish.

Distillation
For the Daniel Bouju cognacs: distillation in a traditional discontinuous pot still (historic still of 16.5 hl) and subsequent maturation in oak barrels; for the Tenute Folonari grappas: discontinuous distillation using steam-heated copper stills.
Ageing
Maturation in wooden/oak barrels for the cognacs and ageing in various wooden casks (in some cases barrique) for the assorted grappas.
