Prosecco DOC Brut from Tenuta Sant'Anna is a surprising wine, which gives pleasant sensations with every sip. The Glera vines grow in south-eastern Veneto, cultivated on silt-clayey soil of medium depth and alkalinity, a typical and characteristic terroir of the Veneto plain, on a very ancient layer - a paleosoil - called "caranto". The climate is generally temperate and humid given by the proximity to the sea, but there are also large temperature variations due to the alternation of cold winds such as the Bora, and hot-humid winds such as the Scirocco.
The vinification is carried out with crushing and soft pressing, with immediate separation of the must from the skins. The must is fermented in stainless steel tanks at a controlled temperature of 15-16°C so as to best preserve all the original aromas of the berries. At the end of the alcoholic fermentation, the second fermentation takes place in an autoclave, with sparkling with the Martinotti method for a period of 40 days.
In the glass you can admire its pale straw yellow color with greenish reflections. When poured it presents a dense and persistent crown of foam, with floral and fruity hints of acacia flowers and rennet apple. In the mouth the fine perlage gives a pleasant creamy sensation on the palate.
An extremely fresh wine, with perfect acidity in the finish, which invites the next sip. Bubble suitable as an aperitif and perfect throughout the meal. He prefers fish-based dishes from appetizers to risottos and fries.
