Romate's Vinagre de Jerez expresses a well-rounded, restrained profile, with a balance between lively acidity and an underlying softness. On the nose it opens with notes of dried fruit and stewed apple, with slightly vinous hints and a light caramelized sweetness that does not overpower the freshness. On the palate it is full-bodied yet clean; the acidity supports without being aggressive and the finish is persistent, with a warm, savory aftertaste that invites another sip.

It naturally lends itself to dressing green salads and tomatoes, to coating fish and shellfish or glazing roasted meats and vegetables; a few drops in a vinaigrette enhance the oil and ingredients without covering them.
