Produced using a traditional grape drying technique, the Amarone "Eleva" achieves a high concentration of natural sugars, acidity, and aromas. The grapes, harvested by hand, are left to dry for several months before fermentation, which takes place at a controlled temperature to preserve the most delicate fragrances. The wine then ages in large oak barrels for at least two years, followed by further refinement in the bottle.

Visually, "Eleva" presents an intense ruby red color, tending towards garnet as it ages. On the nose, it offers a rich bouquet of aromas of ripe red fruits, such as cherry and plum, enriched by hints of sweet spices, chocolate, and a light touch of vanilla, due to the aging in wood.

On the palate, the wine is remarkably full-bodied, with a well-balanced tannic structure that supports a long aromatic persistence. The flavors of ripe fruit mingle with notes of tobacco and leather, creating a complex and satisfying taste experience.

Winery history
The estate and winery originated from a bequest and have been developed under the guidance of Raffaella Veroli and Davide Gaeta. The estate has grown by focusing on strengthening distribution, on hospitality at the cellar carved into the rock, and on creating wines linked to single vineyards, such as Piovesole.

Terroir and vineyards
The vineyards are located in the Conca d'Oro area, Sant'Ambrogio di Valpolicella, on terraced calcareous soils with dry-stone walls. The estate describes the setting as a balance between cultivated land and woodland, with vineyards positioned at approximately 280–300 m above sea level.
