The harvest begins from mid-September depending on the climate and the varieties. At the time of harvesting, which takes place manually, the grapes are placed in perforated boxes that guarantee excellent ventilation and taken to ventilated and climatically controlled rooms: the fruit cellars. The grapes remain in the fruit cellar for a period of 120 days, during which they lose water and weight in a decidedly conspicuous way. On the other hand, however, sugars and extracts are concentrated inside the berries.
In January, after the drying period, the grapes are destemmed, crushed and vinified in steel tanks at a controlled temperature of 20°C for about 30-35 days. The alcoholic fermentation takes place with the contact between the solid part (skins and grape seeds) and the must. During this phase, called maceration, the anthocyanins, assisted by the formation of alcohol, leave the solid part and go into solution.
The refinement takes place in 25 hl oak barrels where there is a natural micro-oxygenation with the stabilization of the color and evolution of the aromatic component. Subsequently the wine is bottled horizontally for at least 9 months to complete the formation of the bouquet.
In the glass it shows a majestic intense ruby red color. The nose is inebriated by aromas of stewed fruit, blackberry and currant. On the palate it is persuasive and extremely balanced characterized by fruity scents with notes of coffee and chocolate.
A superb long-lasting glass, excellent to be enjoyed in combination with important and tasty dishes, grilled red meats, roasts and game and aged cheeses.
