Barolo 2021 by Giacomo Grimaldi presents a composed and expressive profile, where the substance of Nebbiolo is felt without excess. On the nose there are ripe cherry, dried rose and light earthy notes, with an echo of sweet spices that defines the wine’s aristocratic character. The whole is orderly and fresh, supported by lively acidity that balances the tannic weave, giving tension and solid potential for evolution. Elegance is expressed in the precision of the tones and in a dry, saline, well-defined finish.

On the palate the sip is dry and vertical: the tannins are present but well-smoothed, the salinity keeps the pace and the persistence is of good length. You appreciate the gustatory clarity and the wine’s ability to evolve with air and time in the cellar. Excellent with structured meat dishes, braises and aged cheeses; open at least an hour before serving if young, or cellar for several years to appreciate its full complexity. Serve around 16-18 °C to capture its balance and finesse.
