Patiently aged for at least twenty years in oak barrels, it develops a rich and enveloping bouquet, marked by mature notes of dried fruit, vanilla, sweet spices, and hints of tobacco and cocoa. The softness on the palate is balanced by a warm and persistent structure that leaves a long, elegiac trail, typical of extended aging in wood.
Its versatility makes it ideal to enjoy neat, at the end of a meal, enhancing conviviality and reflection, but it also pairs well with dark chocolate desserts or aged cheeses, offering a complete and refined sensory experience. Distillation
Distillation with Armagnac-type stills; the maison uses an Orthez continuous still and other on-site stills, with typical spirit strength at distillation output between 52% and 60% ABV.
Ageing
Traditional aging in oak casks: initial years in new casks (around 400 L), then transfer to older casks for slower, progressive maturation.
