This Calvados V. S. O. P. from the Boulard 12 Barrel Collection presents itself as elegant and measured: on the nose it opens with notes of ripe and baked apple, with subtle nuances of dried fruit and honey that temper its freshness. The alcoholic component is well integrated, leaving room for warm vanilla and light touches of butter and crusty bread, a sign of a rounded, clean distillate base. The profile remains complex without ever becoming heavy, with a balance that invites slow tasting. The rye-cask finish adds character: delicate pepper, toasted cereal notes and a spice that lengthens the sip with pleasant tension.

On the palate it is soft yet full-bodied, the persistence bringing back echoes of apple and sweet spices. Excellent as a digestif at room temperature in a tulip glass, it also pairs well with aged cheeses, apple-based desserts, or in cocktails where a spicy, deep note is desired.
