Winery history
The family's history begins with Émile Gilmert, who sold the first bottles under his name in 1910. The Bonnet-Gilmert brand was established in the 1950s from the union of Colette Gilmert and Robert Bonnet. The operation has remained family-run for generations and is today managed by descendants Aude Vauban and Carla Bonnet.
Production philosophy
Strong focus on the terroir and on sustainable viticultural practices. The producer prioritizes the purity of Chardonnay, hand harvesting and extended aging on the lees to achieve fine, mineral bubbles.
