First pressing wine obtained with mechanical presses with light pressure. Pumping is avoided by decanting only by gravity in order to avoid oxidation, as with every Champagne of the Maison Drappier.

Very low use of sulfur, natural decantation and an alcoholic fermentation for about two weeks at a low temperature. There is no filtration.

The wine thus obtained is aged in steel to maintain maximum freshness, and is then bottled and refined for 3 years.

With bright and coppery colors, it has beautiful aromas of wild berries and fish, while in the mouth it can be tasted very pleasantly, with small sips you can capture the flavors of honey, toast and black currant.

Terroir and vineyards
