Distillation
Double distillation in copper charentais pot stills ('à repasse'), distillation on the lees; only the 'heart' of the distillation is retained.
Ageing
Ageing in oak casks (mainly Limousin); some reserves are kept and matured over generations in the historic cellars and in the Maison's 'Paradis', with cellars maintained at varying humidity to add complexity to the blends.
