Chiaro Della Sera comes from grapes from vines grown on land with exposure to the South West, from the Vigna del Bosco vineyard, planted in 1978 and raised with the Romagna pargoletta system.
The berries used to produce this wine are Bianchino Faentino 60% and Chardonnay 40%, harvested in 3 kg crates towards the first week of September when perfectly ripe, with careful selection of the bunches. In the cellar a soft pressing of the whole bunches is carried out, with fermentation at a controlled temperature of 12-14° on selected yeasts. Maturation and refinement take place in vitrified cement tanks for a period of 3 months, with further refinement in the bottle.
In the glass it has a beautiful pale straw yellow color with greenish reflections. A delicate and fresh scent arrives on the nose with hints of almond and rennet apple, up to nuances of acacia and hawthorn flowers. The taste is dry and pleasant, of medium persistence, pleasantly fresh, aromatic and fruity.
An extremely versatile glass that goes perfectly with potato gnocchi with pesto or herb sauce; it also goes very well with first courses with white or tomato sauces, fish or vegetable risottos. It is also excellent with white meats, sliced veal and fish.
