The Etna DOC Bianco Contrada Santo Spirito by Palmento Costanzo is a pure and fascinating expression of the native Sicilian vines, Carricante and Catarratto, grown on the volcanic slopes of Etna. This wine specifically comes from the Santo Spirito district, an area particularly renowned for its unique terroir, characterized by fertile volcanic soils which give the wine notable minerality and lively acidity.

Palmento Costanzo is committed to respecting the integrity of the Etna landscape and the winemaking tradition of the region, adopting sustainable viticulture practices and winemaking methods that aim to enhance the natural qualities of the grapes. The winery is recognized for its wines which authentically reflect the characteristics of the terroir and the complexity of the native vines.

The winemaking process of Contrada Santo Spirito is careful to preserve the aromatic nuances and freshness of the fruit. Fermentation takes place in stainless steel tanks at a controlled temperature, followed by a short period of maturation on the fine yeasts to increase the complexity of the wine without overloading the delicate varietal aromas.

Visually, the wine presents a light, bright and inviting straw yellow color. On the nose, it offers a rich bouquet of aromas: notes of white pulp fruit, such as peach and pear, intertwine with nuances of white flowers, citrus fruits and a marked minerality, reminiscent of flint and salt, typical expressions of volcanic soil .

In the mouth, Contrada Santo Spirito stands out for its extraordinary freshness and liveliness. The well-balanced acidity supports a rich and multi-layered palate, with flavors that faithfully reflect the olfactory profile and conclude with a long and mineral finish, which leaves a pleasant sensation of cleanliness and persistence.

This Etna Bianco is an ideal companion for a variety of dishes, especially those based on fish and seafood, but also pairs beautifully with light starters and vegetarian dishes, where its minerality and freshness can shine.

The Etna DOC Bianco Contrada Santo Spirito by Palmento Costanzo is a testimony to the profound bond between wine and its territory of origin, offering wine enthusiasts the opportunity to explore the richness and diversity of Etna through a glass of wine authentic and high quality.

Winery history
The Costanzo family recovered and restored a historic palmento on the northern slopes of Mount Etna, which they purchased and returned to use in recent years. Today the estate is run by family members assisted by a local technical team. The restoration of the palmento and the acquisition of pre-phylloxera vineyards have guided the estate’s development and a production focused on contrada expressions.
Production philosophy

Terroir and vineyards
Located in Contrada Santo Spirito, in the Passopisciaro area. Terraced vineyards on volcanic soils, gobelet-trained and supported by dry-stone walls of lava rock, situated mainly between 600 and 800 meters above sea level.
