A Gin produced by a small distillery founded in 2017 in Leith, Edinburgh, which took 2 years to develop the recipe for this liqueur. Distilled in stainless steel alembic with a capacity of 500 liters, electrically powered, with the company's commitment to purchase clean energy from renewable sources, significantly reducing the carbon impact of the gin.
A Gin made with the use of seven botanicals that combine the spicy touch of Sichuan peppercorns and the fresh aroma of fennel seeds, with an important juniper base. A classic gin but at the same time with a modern touch, without fruity aromas, without added sugar, but with a perfectly balanced artisan spirit.
It offers a fresh and herbaceous scent to the nose, with citrus hints of lime and grapefruit. In the mouth it is light, characterized by sweet aromas of agave and a hint of spice, as well as a tantalizing spicy note of Sichuan pepper. A vanilla flavor stands out on the finish, with a touch of almond and a very satisfying clean aftertaste.

Distillation
Gin distilled in small batches using the London Dry method (maceration of botanicals followed by distillation on a Genio still ~500 L). Whisky is produced in a traditional multi-storey plant with fermentation in washbacks and distillation on two large stills designed to preserve character and allow varied spirit profiles.
Ageing
Planned maturation in a combination of casks (primarily Bourbon, Sherry and Port casks), with part of the stocks held in dedicated warehouses (initially stored at Glenrothes) and an ageing program designed to experiment with fortified wine influences.
