Production method

Gin production (Lind & Lime) follows the London Dry style using high-strength neutral grain spirit and small-batch distillation on a 'Genio' still of around 500 L, with maceration of the botanicals followed by distillation. Whisky production takes place in the vertical plant with steel fermenters and washbacks, two large stills and planned maturation processes across several types of casks; part of maturation is managed in external warehouses (including Glenrothes) while the distillery uses a combination of technologies designed for visibility and quality control.

Distillation

Gin distilled in small batches using the London Dry method (maceration of botanicals followed by distillation on a Genio still ~500 L). Whisky is produced in a traditional multi-storey plant with fermentation in washbacks and distillation on two large stills designed to preserve character and allow varied spirit profiles.

Ageing

Planned maturation in a combination of casks (primarily Bourbon, Sherry and Port casks), with part of the stocks held in dedicated warehouses (initially stored at Glenrothes) and an ageing program designed to experiment with fortified wine influences.

Producer history Port Of Leith Distillery

The project idea originated with founders Paddy Fletcher and Ian Stirling; a project company was formed to finance the site construction and the distillery was completed and opened to the public in its current form from autumn 2023, with the first whisky distillation carried out in the following months. To fund the project the founders had previously launched the Lind & Lime gin (2017) and operated the Tower Street Stillhouse as a production and visitor hub until the main facility was finished.

The project highlights Leith's maritime history and integrates sustainability-oriented practices into its spirits production, combining craft gin production with a targeted maturation program for whisky.
