The meticulous selection of high quality grapes and the voluntary limitation of yield in the vineyard give this wine a remarkable structure. The production process begins with destemming and pressing of the grapes, followed by fermentation with maceration on the skins lasting 12-15 days, racking and malolactic fermentation. As regards refinement, the wine matures for 12/18 months in barriques, followed by over 24 months of refinement in bottle.

The result is a wine with an intense ruby ​​red color that tends towards garnet. The aroma is characterized by notable intensity and complexity, with hints of ripe fruit in which morello cherry stands out, accompanied by delicate notes of spices. From a taste point of view, it is soft, warm and rich in noble tannins, with a notable persistence.

It is particularly suitable for pairing with grilled meats, game and mature cheeses.

Winery history
La Garofoli is a family-run company that has been part of Marche viticulture for generations. The company's official website presents the business as "Italian estate since 1901" and describes a family history developed over multiple generations; other specialized sources and technical datasheets report references to the family's activity as early as the late 19th century and to commercial production in vintages predating the 1900s. The company subsequently evolved with facilities in Castelfidardo and vinification structures for Verdicchio in the Serra de' Conti area, and expanded its presence with wines from Conero and other local appellations.
