Pairing Desserts, blue cheeses
L’Egidio Passito IGT by Andrea Bolla presents a profile marked by natural sweetness, balanced by a fresh acidic spine that prevents it from feeling heavy. On the nose it offers ripe and candied fruit — figs, apricot and orange zest — accompanied by honey, toasted almond and a delicate spiciness. On the palate it is enveloping, full-bodied but not excessive: the softness rests on a sapid structure that gives fluidity and a pleasant, non-cloying persistence. The sip remains clean and focused, with a pleasant, well-measured warmth that enhances the interplay of sweetness and sapidity.

It works well both as a wine for contemplation and paired with desserts based on dried fruit and baked cakes, but it also finds a happy match with aged or blue cheeses. It is also interesting with creamy spoon desserts and with small dry pastries. Excellent served cool, around 10–12 °C, to appreciate its aromatic complexity and the counterpoint of sweetness and freshness. A distinctive option for those seeking a modern, elegant passito with effortless balance.
