Le uve vengono interamente raccolte a mano, a perfetta maturazione. In breve tempo giungono in cantina dove l’acino viene separato dal raspo, poi lasciate fermentare e quindi macerare per circa 20 giorni. Dopo la svinatura il vino viene fatto maturare per circa 24 mesi in piccole botti dirovere francese da 225 lt, poi assemblato in vasche di acciaio e successivamente lasciato in bottiglia per 10 mesi.

Colore rosso rubino intenso, ricco di tannini nobili e morbidi. Bouquet ampio che spazia dalla frutta rossa (ribes e ciliegie), al cioccolato fondente e al tabacco, con una leggera vena erbacea nobile. Al palato è ampio, volume avvolgente e di grande intensità.

Adatto per gli arrosti di carni bianche nobili e rosse di tagli pregiati, si sposa con la cacciagione e la selvaggina. Ottimo come vino da meditazione abbinato al cioccolato amaro. Stupendo in abbinamento con formaggi pregiati di media stagionatura e salumi molto profumati.
