The Merlot Rubicone IGT Appassimento Biologico by Terre Cevico is a red wine that captures the essence of ancient winemaking tradition within a modern organic interpretation. Created in the fertile lands of Emilia-Romagna, this wine is the result of a meticulous appassimento process, a technique that involves drying the grapes to concentrate their sugars and aromas, thus giving depth and complexity to the final bouquet.

The Merlot grapes are carefully selected and hand-picked before undergoing a slow fermentation process that preserves their varietal characteristics and enhances the unique features of the local terroir and microclimate. On the nose, the Merlot Rubicone IGT Appassimento Biologico by Terre Cevico presents intense aromas of ripe fruits like plums and blackberries, enriched with notes of vanilla and sweet spices, a result of its partial aging in barriques.

On the palate, it is generous and enveloping, with a well-balanced tannic structure that supports a long and pleasantly persistent finish. The fruity notes harmoniously blend with accents of dark chocolate and a slight hint of tobacco, making this wine ideal for pairing with rich and flavorful dishes such as roasted meats, game, and aged cheeses.

Terre Cevico's commitment to organic practices ensures not only the high quality of the product but also respect for the environment, making the Merlot Rubicone IGT Appassimento Biologico an excellent choice for wine lovers who are conscious and passionate about sustainable practices. Elegant and sophisticated, this wine represents a true expression of the Emilia terroir and a testament to the potential of Merlot in the appassimento style.
