The prestigious Cascina Pastori Colombo winery presents the excellent Vintage "Metodo Classico" "Natusia", offered in a Magnum format to celebrate the most special occasions. This sparkling wine, strictly vintage, represents the pinnacle of artisanal wine production, with meticulous attention paid to every detail of the production process.

The grapes, carefully selected, come from the most expressive vineyards in the area, ensuring an aromatic profile of extraordinary intensity and purity. The Metodo Classico, synonymous with excellence in the production of sparkling wines, involves a second fermentation in the bottle followed by a long period of maturation on the yeast which enriches the wine with complexity and very fine bubbles.

"Natusia" stands out for its bright straw-yellow color and its persistent beads of effervescence that anticipate a complex bouquet. Aromas of citrus, green apple, and hints of fresh yeast and toasted bread envelop the palate, followed by a well-defined minerality that provides freshness and a long persistence.

The structure of this sparkling wine is robust yet elegant, with a perfect balance between lively acidity and a rich aromatic complexity. It is ideal as an aperitif or to accompany delicate dishes such as seafood, risottos, and white meats.

Winery history
The project is linked to the Colombo family: the estate has been active in the Bubbio area since the early 2000s. Sources indicate that vineyard activity began around 2003/2004 with the purchase of Cascina Pastori; the work has focused on restoring historic vines and on showcasing Pinot Nero, alongside Chardonnay and Moscato. From the early 2010s the project has undertaken technical collaborations with winemaker Riccardo Cotarella for the wines' oenological development.
Production philosophy
The estate prioritizes careful, localized vineyard management, agronomic practices that respect the soil and landscape, and winemaking aimed at showcasing the terroir: meticulous vineyard care, limited production, and the use of the Traditional Method for sparkling wines.
Terroir and vineyards
Val Bormida, in the heart of the Alta Langa of Asti. Marl-limestone soils with marine-origin clays; reported elevations vary by source, but the cited vineyards lie at around 250–350 m above sea level, with an exposure favorable to Pinot Noir and Chardonnay.
