On the palate it fulfills the olfactory promise with a warm, well-balanced sip; the texture is saline, with good structure and a persistence that brings back the smokiness along with a slight spicy finish. The drink is smooth but distinctive, suited to slow tasting in a tulip glass and also to small sips at room temperature or slightly cool. It pairs easily with savory dishes such as grilled fish, meat tacos, or dark chocolate and aged cheeses, adding depth without overpowering.
