Nuwa Baijiu from Beijing Red Star presents a decisive but well-balanced personality: on the nose it offers an intense profile recalling fermented cereals, a light floral note and hints of bread and spice, without ever becoming overly sharp. The sip is full and enveloping, with a warm alcoholic presence supported by good roundness; the palate is savory and slightly umami, lending persistence and a clean finish, making it immediate yet complex at the same time.

It is best appreciated served in small glasses at room temperature or slightly chilled, to temper the heat and showcase the aromas. Distillation

Solid-state fermentation (固态发酵) followed by traditional distillation with separation into fractions (practice of 'taking the heart' typical of the Erguotou technique).

Ageing

Most products are offered as young/'clear' spirits, but there are also commercially marketed expressions labeled as '陈酿' (e.g. packages indicated as 8 years) that undergo a period of maturation before bottling.
