The harvest of the Pecorino grapes is done manually, usually in the first days of September, to maintain the integrity of the fruit and ensure that only the best grapes enter the winery. After harvesting, there follows a delicate pressing and controlled temperature fermentation, strategies aimed at preserving the natural and fresh aromas of the vine.
The result is a wine that presents itself with a bright straw yellow color, highlighted by greenish reflections that underline its youth and freshness. On the nose, the Pecorino Falerio DOC BIO Vegan from Cantina Colli Ripani offers an intense and complex bouquet, with dominant notes of ripe white fruits like green apple and pear, enriched by subtle nuances of aromatic herbs and a pleasant touch of minerality.
