Pecorino is a white grape variety widespread in central Italy, loved for its ability to offer a variety of unique nuances.
The grapes are harvested manually, carefully selected and stored in cold storage for 5-10 days before being taken to the cellar for the fermentation process. After fermentation, the must is left to mature in steel containers for 2-3 months, subjected to delicate movements of the lees before bottling.
The wine has a brilliant straw yellow color, with light greenish nuances. On the nose, it offers intense aromas of green apple, medlar, cedar, lily of the valley and light floral notes. The taste is intense and citrusy, but delicate, with an excellent salt balance that leads to a satisfying finish.
It is perfect for an aperitif and goes well with fish dishes and white meat-based main courses.
