Pairing Appetizers and all fish dishes
The Rosato IGT from Santa Barbara shows a pale, bright pink; on the nose it offers aromas of small red fruits, strawberries and a light cherry note, accompanied by floral hints and a touch of citrus that adds freshness. On the palate it is lean and fluid, with lively but well-integrated acidity, balanced salinity and virtually no tannins; the finish is clean and invites another sip.

Best enjoyed young, it pairs with antipasti, light fish dishes, salads and summer vegetable plates. It is also enjoyable with fresh cheeses and cold cuts and works well as an aperitif wine; it displays structure, aromatic persistence and a pleasant balance between softness and freshness. Serving suggestion: chilled, between 8 and 10 °C; store in a cool, dark place. A versatile choice for informal occasions and convivial moments, for those seeking an unassuming yet harmonious rosé.

Winery history
The winery and its name are tied to the village of Barbara; the production site occupies an old monastery. Stefano Antonucci, from the area, leads the company — after a banking career he returned to Barbara to grow the family wine business and launch labels such as Pignocco and other experimental wines.
Production philosophy
Passion and innovation, respect for the land and grapes. The estate often makes experimental yet drinkable wines: “to make the wine that I like first of all, a wine for the drinker.” Organic practices are used for some labels, including Back to Basics.
Terroir and vineyards
