Rosso Colli Euganei is so called because it is the red wine par excellence, as it comes from the union of the three most common red berries: Merlot, Cabernet Franc and Cabernet Sauvignon. The le Volpi & Monte Fasolo estate cultivates all 3 of these vineyards in the southern part of the Euganean Hills, specifically between Baone and Cinto Euganeo. This area was chosen for the high percentage of minerals present in the soil, which give life to a high-profile wine production. To produce Il Rosso, the three varieties are fermented separately and kept in maceration for about 15 days. After which they are combined and left to refine for 12 months in a French oak tonneaux and another 12 months in a barrel.
As can be understood from the name, this wine has an intense ruby red colour. On the nose it looks like a floral, fruity wine with fine spicy notes. In the mouth it is dense, but at the same time soft and warm.
Rosso Colli Euganei is excellent to combine with meat and cheeses.
