Domus Caia Sangiovese is a precious reserve of the Ferrucci company, an innovation obtained with an unusual technique for Sangiovese, that of drying the grapes. The harvest of the Serra di Castelbolognese vineyard takes place around the third week of September, when perfectly ripe with careful selection of the bunches, placed in 3 kg boxes and subsequently left to dry.
The vinification is carried out with fermentation and maceration in cement tanks verified with inoculation of selected yeasts; maceration on the pomace and fermentation at a controlled temperature of 28-30° with frequent pumping over every 8 hours. Maturation and refinement take place in tonneaux (500 liter oak barrels) 1/3 new, 1/3 second passage, 1/3 third passage for 12 months; followed by further refinement in the bottle for 18 months before being put on the market.
In the glass it shows off a beautiful bright ruby red color. The nose has floral aromas of dried rose with hints of ripe fruit, cassis and stewed plum, as well as notes of vanilla and cinnamon. In the mouth the taste is decidedly dry and velvety, which continues fine and elegant.
A full-bodied wine with a long persistence, perfect to accompany red meats and game, aged cheeses and to try with grilled mushrooms.
