The Sauvignon IGT Animale Celeste from the Santa Barbara winery presents a fresh and straightforward profile, ideal for those seeking a white wine for immediate drinking. Visually it shows a straw-yellow, clear color with slight greenish reflections. On the nose there are notes of citrus, white flowers and a hint of herbaceousness that recalls the variety without being overpowering. On the palate the sip is saline and lively, supported by good acidity that balances the rather light structure; the finish is clean and easy to read, suitable for everyday consumption but with a recognizable personality.

It pairs simply with seafood, salads and light pasta dishes, but can also accompany grilled vegetables or fresh cheeses. It is recommended to serve it chilled, around 8–10 °C, in a tulip glass to capture the aromas; opening it shortly before serving is sufficient. It is a practical choice for informal meals and small convivial moments, suited to those who appreciate clean and direct white wines without excessive over-structure. Storing it in a cool, light-protected place helps preserve the aromatic sensations.

Winery history
The winery and its name are tied to the village of Barbara; the production site occupies an old monastery. Production philosophy
Passion and innovation, respect for the land and grapes. The estate often makes experimental yet drinkable wines: “to make the wine that I like first of all, a wine for the drinker.” Organic practices are used for some labels, including Back to Basics.
Terroir and vineyards
